I had one of those slap you in the face “You’re getting old” moments. I realized this as I caught myself with product in hand, first up close to my eyes, and then far away, then up close, then far away, trying to find the correct distance so I could read the label. I’m in need of reading glasses. Images of grandmas sitting in rocking chairs, hair in a bun, glasses at the end of their noses attached to chains around their neck. Ugh….
And so my internet search began for cute frames when I stumbled upon Fetch Eyewear. These guys have some trendy and chic looking specs at decent prices. You can have six frames delivered to your house, choose your favorite, and send back the rest no charge. Brilliant! Then as I’m checking out the rest of the website, I read that 100% of their profits go to The Pixie Project. The Pixie Project being an animal rescue/adoption organization. Double brilliant! Topo Chico is a mineral water from the thermal springs in the hills of Monterrey Mexico, and it’s seriously good! It has a crisp clean taste with just the right amount of fizz. The NY Times even wrote an article about it, so the word is getting out.
My favorite way to drink it is as a lemonade (a la Sr. Elizondo). All you need to do is add the juice from one small lime and one stevia packet (or your choice of sweetener). This is a great drink for summer. Salud!
“They” say it’s a great hangover cure as well, though I haven’t tested this. 😉
I’m getting ready to say good-bye to California and return to Monterrey Mexico. I was able to spend some time on the central coast: Cambria, Pismo, Morro Bay, and drove Highway 1 through Big Sur. For many who have never been to California, I’m sure images of Los Angeles and San Diego beaches are flashing through your mind. However, the central coast is nothing like it. The central coast has a much more small town, cozy, laid back vibe. One strip towns of shops and restaurants, cool breezes and chilly evenings in the summer. The stunning scenery of the ocean and redwoods are amazing.

The 2016 Perseids meteor showers are happening now. They peaked last night and I made it a point to stay up late to see it. It was worth it as I have never seen a shooting star before. I´m proud to say that I have now seen three! These showers are still going on through Aug 24th. Take a look tonight and check it off your bucket list too. I do recommend a lawn chair or blanket….save your neck!
I’m a wanna be vegan and today is my 3 month mark of no meat consumption. I wish I could wake up and be vegan, but I’m a baby step kinda girl. When I look back at these past months, giving up meat was not the hard part. It turns out I don’t crave meat in any form. It’s been easy squeezy. What hasn’t been easy squeezy is cheese. I love cheese! I replaced milk with almond milk, butter with different types of oils, but cheese has become my Achilles heel. So, what I am doing is limiting it to once a day. Baby steps, remember? One of my favorite go to dishes now is this Summer Vegetable Tian. I found it on Budget Bytes and it is super easy and delicious.
Slice 1 medium onion and mince 2 garlic cloves. Sauté in a pan with 1 tbsp. olive oil for about 5 minutes. Place the onion-garlic mixture in the bottom of an 8×8 oil sprayed casserole dish. Now, slice 1 zucchini, 1 yellow squash, 1 potato, 1 tomato and arrange vertically in an alternated pattern. Sprinkle 1 tsp Thyme and salt & pepper on top. Cover with tin foil and bake for 30 minutes at 400 degrees. After, take the dish out of the oven and top with 1 cup of parmesan cheese. Put back in the oven uncovered for approx. 20 more minutes until cheese is melted and golden. ( I personally add Italian seasoning and use a combination parmesan-mozzarella)
