May Recap-Week 4

It was gloomy and rainy all week.

However in Playa, Sandy Toes 2.0 is almost ready. YAY!

This week’s binge program: The Great on Hulu. (Be forewarned: It’s a bit on the raunchy side.)

Next level Dalgona coffee: The Dalgona cocktail. Haven’t tried it yet, but it’s on my list.

  • 2oz Bailey and 2oz vodka put in glass.
  • Dalgona coffee: 2tbs instant coffee; 2tbs sugar; 2tbs cold water. Blend until fluffy.
  • Scoop coffee into glass.

Even in quarantine, Sr. Elizondo manages to buy me roses.

May Recap-Week 3

I’m once again an official Temporary Resident of Mexico. Hopefully, no deadlines will be missed this time for my permanent status.

My yard is blooming and I’m starting some new transplants.

I made this so-good hamburger “casserole” mix and simply ate it with fresh greens.

Recipe:

  • Preheat oven to 400 degrees.
  • Fry a pckg of ground beef with 1/3 onion and drain.
  • Add 1tsp salt (or to taste); 2 tsp garlic powder; 1/4 tsp cayenne pepper.
  • Patiently mix in 4oz cream cheese and 1/2 cup shredded cheddar.
  • Put in an oiled casserole dish and top with the remaining 1/2 shredded cheddar.
  • Cook for 10 min or until cheese melted on top.

Listening to my first audio book, “The Great Alone”. I’m quickly realizing I need to completely do nothing while listening.

Who wouldn’t love a cheese waffle? The Chaffle is one egg and 1/2 cup finely shredded cheese. You can go on the internet for a plethora of variations and much prettier examples!

Sam was traumatized by the thunder/lightening storm that happened this week. I was traumatized by Sam. After a gentle reminder from the vet, “…she’s an older dog now”, we both powered through. Below is the look of worried anticipation.

Local Milk blog/instagram has become one of my favorites. Beautiful photos with cooking and inspirational videos.

La Roche-Posay Effaclar BB Blur mousse. My new fave go-to. It’s total coverage and you can’t feel it on your skin.

My latest Keto snack: almond flour tortillas lightly fried in butter, and topped with Stevia and cinnamon. I had to put on the brakes eating these. They were too good.
