August Recap-Week 1

I got a dozen roses for each of the 10 years Sr. Elizondo and I have been together. I happily have bouquets all around my house now.

My penchant for reading has returned to me. I started and finished, “The Five”. It tells the life of the 5 women victims of Jack the Ripper. This is NOT a story about the Ripper, simply about the lives of the women leading up to their fateful nights. I enjoyed this book so much more than I thought I would. Definite recommend.

My ZIIP arrived. My face is ready to be tightened up!

This midi shirt dress from Zara had me at Hello….and it has pockets.:) It’s a website where you can see peoples views from their homes, as well as share your own. A quarantined developed app I’m sure.

Playa del Carmen postponed yet again. Keeping hope alive for September.

I have developed an addiction to Nutella sorbet that my neighbor makes, sells, and now delivers. It’s like having an on-call ice cream truck.

Weekly Recap-July Week 4

A typical and almost mandatory Sunday morning breakfast in Monterrey is barbacoa tacos. Mmmmmmm.

Did you know that if roses don’t get enough sun, the blooms don’t get very big? My mini roses below have just been moved to a more sunny spot.

Now that I’ve discovered Janaya Khan’s Sunday Sermon on Instagram, I never miss them. Janaya is a gifted speaker that inspires strength, equality, unity, and love.

It might just be me…quarantine brain…or something else, but I see the Virgin Mary in my duvet cover.

This is probably the best Caesar salad dressing you can buy at the grocery store. It’s also one of the cheapest.

I bought my “Summer” Covid mask. (BTW: Sr. Elizondo and I both tested negative this week.)

July Recap-Week 3

Feelin’ the quarantine boredom this week for sure.

I found one of my favorite movies of all time with English subtitles on YouTube. Loveeeeeee!!!!

Sr. Elizondo’s daughter has adopted this little guy who showed up at her house one day. The big debate: is it a male or female???

July Recap-Week 2

I was a quarantine quitter this week. I went to a couple of clothing stores (with mask and plenty of hand gel of course). Then the day after my shopping trip, Mty was put in complete lockdown due to hospitals at max capacity. Why did I go out?… Not a great decision on my part, but I did buy a few purchases.

An oversized button down and cream wide leg jeans, both from Pull & Bear. From Women Secret, a brightly patterned beach type dress and summery wrap dress.

I’ve been on an old school French film kick.

Still trying to do my part for the environment. Material makeup remover pads that came with a bag for the washing machine.

My balcony garden is growing and my recent jasmine purchase is on its second bloom. I had no idea a garden could be exciting.

I finally found a Golden Milk I somewhat like. It’s an acquired taste.

I had to giggle when I opened our refrigerator door to find this little suprise.

Sr. Elizondo and I have been talking about a possible move in the near future. Our current 4 story home is not our “forever home”. While house browsing to see what’s available, we walked into this kitchen and instantly fell in love. Light wood with white quartz, plenty of storage and plenty of space.

July Recap-Week 1

Another visit to Santiago and another lunch. This time at Las Palomas in the center plaza.

Current read: The Secret History. The story of 6 nonconformist college students who commit murder. I’m only on chapter 5, but I’m going to already recommend it.

Feeling the good vibes on a Sunday morning.

Sarah Cooper videos of Trump just get funnier and funnier every time I watch them.

Got bored and cut my own hair via an Alexa Chung video on Youtube.

Tazo Iced Passion Tea tastes identical to Starbucks when you add 2 Stevia packets per tall glass.

My Olio E Osso finally arrived. A quick swipe on the lips and cheeks is perfect for a fresh no-makeup makeup look. I bought it in French Melon.

June Recap-Week 4

A Fathers Day success. It was so nice to see Sr. Elizondo’s kids all together. My new place settings looked great too.

A random purchase: a kitsch pink flamingo. I couldn’t help myself.

Sandy Toes 2.0 is officially mine! Papers signed. I’m one step closer to some quarantine-modified beach livin’.

Making it a point to drink a minimum of 2L of water per day. The slice of lemon makes all the difference to my success.

Don’t know what to do with yourself staying at home? I’m a fan of this quarantine routine.

My latest series find: I Love Dick. A funny and feminist, but sexually explicit series.

June Recap-Week 3

SamSam continues to maintain her hummingbird vigilance.

My current read is The Great Gatsby. I hate when I see a movie before the book. Just as I thought, the Hollywood visual will not escape my mind while reading it.

I made Keto Lemon Cheesecake jars. SO FRICKIN GOOD. I tasted no difference from the real thing and it literally took about 10 minutes to make.

Using a mixer, blend: 8oz cream cheese, 3 tbsp heavy cream, 1/4 cup lemon juice, 1/4 cup Stevia, 2 tbsp melted coconut oil, 1 tsp lemon grated lemon zest (optional). Set aside. For the crumble: 1/2 cup Almond flour, 1 tbsp Stevia, 1/8 tsp salt, 1 tsp vanilla extract, 1 tbsp melted coconut oil. Use a fork to blend into a crumble. Layer in a jar and refrigerate for at least 1 hour.

Speaking of food, Sr. Elizondo made one of my favorite soups: Pork, Squash, and Corn. I’m set for quite awhile!

I finished my 40 day Kirtan Kriya Meditation, along with my gratitude journal. Next milestone: 90 day.

June Recap-Week 2

Now that Mty is opening back up, we made the short drive to Santiago for breakfast. It was a bright sunny morning with a touch of whimsy (via teacups hanging from the restaurant ceiling).

We also bought a few flowers to plant. Then I found myself repotting others.

I’ve never tried to grow a rose before. Fingers crossed I can keep this beauty alive.

Just when I get so discouraged by the world, people rise up in support one another and renew my faith in humanity.

It was gloomy and rainy all week.

However in Playa, Sandy Toes 2.0 is almost ready. YAY!

This week’s binge program: The Great on Hulu. (Be forewarned: It’s a bit on the raunchy side.)

Next level Dalgona coffee: The Dalgona cocktail. Haven’t tried it yet, but it’s on my list.

  • 2oz Bailey and 2oz vodka put in glass.
  • Dalgona coffee: 2tbs instant coffee; 2tbs sugar; 2tbs cold water. Blend until fluffy.
  • Scoop coffee into glass.

Even in quarantine, Sr. Elizondo manages to buy me roses.
