June Recap-Week 3

SamSam continues to maintain her hummingbird vigilance.

My current read is The Great Gatsby. I hate when I see a movie before the book. Just as I thought, the Hollywood visual will not escape my mind while reading it.

I made Keto Lemon Cheesecake jars. SO FRICKIN GOOD. I tasted no difference from the real thing and it literally took about 10 minutes to make.

Using a mixer, blend: 8oz cream cheese, 3 tbsp heavy cream, 1/4 cup lemon juice, 1/4 cup Stevia, 2 tbsp melted coconut oil, 1 tsp lemon grated lemon zest (optional). Set aside. For the crumble: 1/2 cup Almond flour, 1 tbsp Stevia, 1/8 tsp salt, 1 tsp vanilla extract, 1 tbsp melted coconut oil. Use a fork to blend into a crumble. Layer in a jar and refrigerate for at least 1 hour.

Speaking of food, Sr. Elizondo made one of my favorite soups: Pork, Squash, and Corn. I’m set for quite awhile!

I finished my 40 day Kirtan Kriya Meditation, along with my gratitude journal. Next milestone: 90 day.
