Ratatouille is one of my favorite ways to get my daily veggie intake. It’s a French ragout and I think it’s one of those dishes that everybody has their own way of making it. If you look on the internet, there are a thousand different versions.
The beauty of Ratatouille is that it’s not only delicious, but it’s incredibly forgiving. Some of mine haven’t been the prettiest, but they always taste good.
My current version (subject to change) and Sr. Elizondo’s favorite thus far:
Sauté 1/2 onion in olive oil. Add 1 garlic clove and 1 bell pepper. When you can smell the bell pepper cooking, add 2 zucchinis, 1 eggplant, and mix. On top of the mix add 3 Roma tomatoes, 3 bay leaves, fresh thyme, s&p. (Now take a pic because it’s so pretty.)
Cover and simmer for 15 min. Gently stir. Now I check every 5 min or so until my veggies are the consistency that I like.
*Cut your veggies into big chunks. Ratatouille cooks fast.
I added grated parmesan on top and it was perfection; or on top of a piece of french bread, yum…
