Keto Lemon Cheesecake Bars

My lemon love continues…

Preheat oven 350.

Put parchment paper in a 8×8 pan. (I actually just oiled it and it was fine).

Mix together and pat into the bottom of the pan for the crust:

  • a stick of butter
  • 1 cup Almond flour
  • 1/4 cup Stevia
  • a pinch of salt

Cook for 20 min.

For the filling, mix together:

  • Juice from 3 medium lemons
  • 3 large eggs
  • 1/4 cup Stevia
  • 3/4 cup Almond Flour
  • 8oz cream cheese
  • a pinch of salt

Pour the filling onto the crust and cook for an additional 25 minutes.

Let the bars set for at least and hour preferable two. Refrigerated they taste best and they freeze well too.
