This cake (in a pie dish) is perfect for people who don’t like super sweet deserts. It has a fluffy cake like texture with only a slight vanilla sweetness to it. Sr. Elizondo and I have been eating it for desert, breakfast, and as a snack. So take your pick. Most recently, I made it for Sr. Elizondo and his friend. 30 minutes later, there was only 1/2 of a piece left. Apparently, marmalade on top of it is delicious.
Preheat oven to 325.
Spray your pie dish with avocado or olive oil
Mix together:
- 3 large eggs
- 1 cup Greek yogurt
- 1 1/2tsp stevia
- 1 tbsp vanilla extract
- 1/4 tsp salt
Then mix in 1 1/2 cups almond flour and 1/2 tsp baking soda.
Put the batter in the pie dish and cook for approx 30 minutes until golden brown.
