Sooo, Sr. Elizondo and I watched “The Magic Pill” on Netflix and my takeaway was this: Sugar and carbs are an invitation for cancer. Therefore, I’ve been adopting some keto ways.
This is my first attempt at keto 90 second bread. It was easy squeezy to do. Just mix 3 tbsp almond flour, 1 egg, 2 tbsp butter, 1/2 tsp baking powder and 1/8 tsp salt. (I personally used a small pinch.) Put it in the microwave for 90 seconds.
I was a little nervous at first because I could smell egg immediately after taking it out of the microwave, but it didn’t taste too eggy (for me). The texture reminded me of cornbread.
I decided to toast it to see if that changed the texture any….it didn’t.
I added a bit of stevia and cinnamon for cinnamon toast. Would I make this again, Yes. It completely satisfied my carb craving. In fact, because it’s denser than normal bread, I was completely full.
I think next time I will try coconut flour to see if the texture is less grainy. I also just read that separating the egg yolk and fluffing the whites helps to make the bread a lighter density.
