A popular drink in Mexico is Agua de Jamaica, also known as Hibiscus Tea. It’s served everywhere and the supermarkets sell small mountains of hibiscus leaves in the produce area.
Hibiscus tea is super easy to make. It’s 2:1 ratio. 2 cups leaves to 1 quart water. Put the leaves in cold water, put stove on high and bring to a boil.
Once it comes to a boil, put it on low for about 10 minutes. Turn the stove off and let the liquid sit until cooled. Strain the leaves out and put the concentrate into a glass container.
When ready to drink, put about a 1/3 of the concentrate into a glass pitcher and add water to fill the pitcher with 1/4-1/2 cup sugar (depending on how sweet you like it). The additional water and sugar is all up to you and your taste. (I used 8 individual packets of stevia.)
