I loveeee cilantro, and this salsa (a la Sr Elizondo) is Que Rico!.
(Measurements & times are approximate)
2 lbs small green tomatoes
1 chile Serrano (add another if you like your salsa hotter)
1 bunch of cilantro
1/4 tsp salt
Boil whole tomatoes, chile, and salt until the tomatoes are a light green and soft. (20 minutes)
Turn off the stove and leave the tomatoes and chile in the pot of water until cooled. (1 hour)
Put the tomatoes and chile in a blender and fill the blender half way with the water from the pot.
Add the cilantro leaves and blend.
